The La Judith Pinot is a wine of spectacular opulence, sourced from a single vineyard in the Coal River Valley.
The vines are grown in very shallow soil at the top of a windswept hill.
Seriously low yields, small berries, tiny bunches - makes for super concentration of both dark fruits and plush tannin.
“Five-spice, rose petal, dark plums and poached cherry. Super concentrated flavours lengthened by supple tannin and fine acidity.”
Vineyard: 100% Coal Valley, S Tasmania.
Yield: 1.5 tonnes per hectare (0.6 tonnes per acre).
Winemaking: Pre-ferment cold maceration for 7-days. 7-day wild ferment followed by 3-week post-ferment soak.
Oak: 30 months in new French oak barrique.
Filtration: Unfiltered.
Alcohol: 13.9 %
pH: 3.57
Total Acidity: 6.5 g/L
Residual sugar: 0.1 g/L
